We’re a family of coffee lovers turned roasters, driven by moments shared around the table with those we love. Our passion for roasting coffee sparked the first time we tasted specialty-grade coffee beans in Northern California–an experience so rich we knew it was meant to be part of our lives. What started as a dream to roast in our own home for family and friends quickly grew into something more. With every sip our family and friends took, we felt the pull to share this craft of love with others. Today, we’re here to bring you the coffee we adore, infused with our heart, our dreams, and a taste of home.

Our Source

At The Peace Gov. LaVallie Roasters & Co we source our beans from the experts at Coffee Shrub, a trusted name in the coffee world, bringing us a carefully curated selection of top-tier, directly sourced coffees that help us make every cup exceptional.

Our Process

We receive raw, green beans from around the world that are stored in large burlap bags. Every week we roast in small batches in our beloved ARC drum roaster according to our sales needs. The coffee is roasted for 7-10 minutes a batch, depending on the roast profile, humidity and temperature. After the coffee is released and cools down we let it rest a few days before it's ready to be enjoyed.

We have a value for the process as much as we do the product. We know that integrity and excellence matters at every stage of development.

The Perfect Pour Over!

We want you to enjoy our coffee the best possible way when it comes to the pour over. Here are a few tips!

How to Make your Perfect at Home Pour Over:

We prefer a 16:1 coffee to water ratio!!!

First You will need 20 Grams of coarsely ground coffee and Hot water around 199 degrees Fahrenheit.

  1. Pour 50 grams of hot water. Allow 30 seconds to drain.
  2. Pour 150 grams of hot water, starting in the center and spiraling outward. Allow to drain or one minute.
  3. Pour 120 grams of hot Water. Start your pour from the outside spiraling inwards to reincorporate all of the grounds into the perfect brew.

Home Espresso guide:

20 grams of fine ground espresso yields 40 grams of Liquid Espresso, the extraction should take 27 seconds.
